Quick No-Bake Energy Nuggets



Ingredients:

Makes approximately 8-10 nuggets

200g of mixed dried fruit
1 cup of ground almonds/almond flour
1/2 cup of oats
1/2 cup of dessicated coconut
2 tablespoons of cocoa powder
1 tablespoon of coconut oil
1 teaspoon of cinnamon

Step 1: Place the dried fruit, ground almonds and oats in a bender or food processor and whiz for 1-2 minutes.

Step 2: Add in the cocoa powder and cinnamon and pulse for 30 seconds. Add the coconut oil to the mixture and pulse until all the ingredients come together.

Step 3: Using a spoon, scoop the mixture and roll into truffle-sized pieces, roll the nuggets in the coconut to coat.

Step 4: Store in an airtight container in the fridge to set until you need a quick energy fix.

  1. Is there any varation of this recipe that doesn't use almonds? I'm intolerant to them, but this sounds like an awesome thing to have in the cupboard or in a lunchbox to keep u going through the day.   2. Hey:) thanks I'm gonna pick some up tomorrow after work and give it a go! Your tikka spiced fish is a really good one too, your quite the chef I must say I'd love getting you in my kitchen you seem like a natural lol how do I make one of these blog things? Its a really good way to share recipes with new people xx
